  • 4 cups cooked wild rice*
  • 4 cups spinach leaves lightly packed
  • 2 cups diced celery
  • 1 cup whole fresh mint leaves lightly packed
  • ½ cup lime juice
  • ¼ cup walnuts toasted


  • Put all the ingredients in a large bowl and stir until well combined.
  • Serve chilled or at room temperature.


*Wild rice is naturally gluten free. But it sometimes gets processed with the same machinery and in the same plants as non gluten-free items.
