  • 2 cups unsweetened pineapple juice
  • ½ cup pitted dates
  • ½ cup dried apricots
  • 2 cups unsweetened pineapple juice
  • 2 teaspoons vanilla extract


  • Put the pineapple juice, dates, and apricots in a medium pot and bring to a simmer over medium heat.
  • Decrease the heat to low and cook for 10 minutes.
  • Transfer to a food processor or blender and process until smooth.
  • Serve warm, chilled, or at room temperature.
